Hey y’all! What a weekend! I can’t believe the weekend is almost over. They are never long enough…I love hanging out with my man and just not worrying about work.
So Saturday morning I got up super early to meet Juile at a local high school track to work on my running.
Here’s what we did:
2 lap warm-up
Plyometric Exercises: butt kicks, high knee kicks, grapevine, bounding
Interval training:
1200m (3 laps) x2 – In between these sets Islowly jogged 1 lap (goal time 7:00 mins)
800m (2 laps) x2 – (goal time 4:30)
400×2 (1 lap) x2 – (goal time 2:23)
8 min cool down jog
Stretching
10 push-ups
This is the first time I’ve run in a long time outdoors and I am paying for it today. But it was a great workout and I was glad to have been pushed hard.
After I finished up with Julie, I headed home to get cleaned up and then decided on what I’m going to make this week for the different Thanksgiving events I’m attending. I’ll post my dishes and recipes later on this week. So, I went to the store to get all of my ingredients. After that I headed home to help get the place cleaned up and do fun stuff like laundry, etc. My husband and I also worked on a little art project for our place and it turned out great.
After we finished up what we were working on, we got ready to head over to our friends house for dinner and games. Another couple joined us with their little one. So, our day was packed, but super fun and productive
Saturday’s eats:
Breakfast
I ate this bar on my way to meet Julie. I love this flavor!
Lunch
I had a Chargrilled Chicken Sandwich from Chick-fil-a that I picked up for me and the hubby while I was out running my weekly errands. I also added some Salt and Black Pepper chips with it. Yum
Dinner
Last night we went over to one of our friend’s last night and had a Thanksgiving feast. The feast included chicken and stuffing casserole, corn casserole, both steamed and sauteed asparagus, mixed salad, croissants, whole berry cranberry sauce and I brought “smashed peas”. (no photos as I was hurrying to get this done in time to be there by 7:00 pic is from here.) For dessert, we had banana bread and pumpkin pie. And a little Rose’ wine.
I personally had some of the wine, asparagus, mixed salad and cranberry sauce and later on in the night a slice of banana bread.

For the smashed peas I sauteed 1/2 yellow onion, 1/2 clove of garlic, salt and pepper. Once the onions were soft, I added 16 oz of frozen peas which I ran under water to thaw a bit. I let these simmer for about 20 mins and then pulsed them in the food processor until a relatively smooth consistency was achieved and then I added a little non-dairy “butter” to them. They were yummy.
After dinner all of us played Settlers of Catan for like 2 hours! I can’t believe we played a single game that long. The hubby and I have only recently discovered this game and it’s a little addicting and so much fun. If you’ve never played it, buy it and play it. We ended up getting home after midnight and crashed out.
Today I did not keep track of my calories but I tried to be level headed and didn’t go overboard.
