I am sad that our holiday break is already over. I love the holidays and having the ability to do what I want and hang out with the hubby and family. So, it was really hard to get excited about getting ready and heading to the office. But it’s back to the grind. And of course, Monday’s are always filled with surprises and sometimes frustrations. But eventually, the day got better and I was really busy, so that made the day fly by.
Onto today’s eats….
Breakfast: I started this beautful day with a delicious smoothie. Here’s what’s in it:
1 cup Unsweetend Vanilla Almond Milk
1 cup Spinach
2 Tbsp Living Harvest Hemp Protein Powder
1/2 cup Frozen Blueberries
1/2 Ripe Banana
1 tsp cocoa powder
A few drops of Stevia

Breakfast Smoothie
Mid-morning I made some hot tea: Pumpkin Spice tea, splenda and silk soy creamer – x2 – I had another one later in the day. It was so delicious (Approx 65 cal for 2)

Lunch: I had some delicious leftover and a salad for lunch toda. The lentils were so good – I probably had 1.5 servings today (278 cal). My salad contained: 1.5 cups Arugula, 1/4 cup cucumber, 1/2 roma tomato, 2 mushrooms and 2 radishes. I unfortunately left my dressing at home, so my salad was dry. It was good, but could’ve been better with some dressing (33 cal).

Curried Lentils + Sweet Potatoes
Snack: Granny Smith Apple with 1 Tbsp of Peanut Butter (221 cal)

When I got home from work, I had about 1 Tbsp of peanut butter and 2 dates before I went on a run. (145 cal)

Dinner: Since the hubby’s out of town I just threw a quick dinner together for me. A Gardein Chick’n Scallopini patty, 1 small zucchini, 3 mushrooms sauteed. (115 cal)
Sorry no pic, I got distracted and was talking on the phone to the hubby and didn’t realize until I was done eating that I didn’t snap a pic. I think I might have a grapefruit in just a bit for dessert (82 cal)

Warm-up: 10 min walk
Run: 30 mins
Cool down: 10 min jog/walk
Plyometric exercises: Butt Kicks, Knee Kicks, Bounding, Grapevines
