Sunday was another gorgeous Tampa morning. I can’t believe how great this weather is. I wish it would stay this way all year round. Sunday has been our catch-up day since we were gone for Thanksgiving and had my sister in town.
The hubby was so sweet Sunday morning and brewed us both a cup of hot tea. I had mine in bed while I read a little of my bookclub book – The Namesake. It was great!
Breakfast: I was in a hurry before church (surprise, surprise) so I grabbed on of the hubby’s granola bars for breakfast. (130 cal)
At church we had a family service where several people speak on the topic of Thanksgiving and even a few or our members talk about why they are thankful for our church. It was a good service. After church, I decided to run to the grocery store and get some stuff for the week. The hubby is heading to Miami for the week, so it’ll just be me and Bentley Scratchy Pants until Friday and then I’ll head over to Miami for the weekend. I’m excited to spend the weekend there. I’ve only ever passed thru Miami, so I want to see some sights while we’re there.
I snacked on 1/2 a white chocolate macadamia nut luna bar on the way home from the grocery store – (95 cal)
Lunch: I picked up another Gardein product at the store- Gardein Homestyle Beef Tips. I sauteed them and then put them on top of an arugula salad with 1/4 avocado, radish, cucumber (164 cal). I drizzled balsamic vinegar over the greens for the dressing. I also had the last of the blueberry cobbler with extra blueberries added. (151 cal)
I really enjoyed these “beef tips”. The hubby said they didn’t really taste like meat, but I thought they kind of did. The texture was pretty much right on. They weren’t as chewy as beef, which I think is good. They had a good flavor and I think they’d be good in a stew or chili. They were great over my salad. The downside to these is that they have a good amount of sodium. I hate that about frozen food. But I will still buy these.
Snacks:
While working on some things around the place, I snacked on some of these chips.
I also had a few dates with peanut butter – 5 dates (120 cal); 1 Tbsp peanut butter (105 cal)
Dinner: For dinner I made Curried Lentils and Sweet Potatoes from Smitten Kitchen. I altered it a bit by using Spinach instead of Kale. I also didn’t use as much as it called for because I only bought one bag of Spinach for the week and wanted to make sure I had enough for my smoothies this week. I topped it with some sauteed asparagus (230 cal)
And for Dessert – 1 smore (130 cal)
Goal: This holiday weekend I noticed that I have been a big snacker and have snacked on a lot of processed foods – like chips…so, this week I’m going to steer clear of these foods. I didn’t even purchase any luna/clif bars for the week. I need to get back to eating more whole foods. I love to snack and still can, but need to be smarter with the foods I consume.

The hubby and I just hung out and got ready for the week. I did some laundry, blogging and straightened up the condo. He worked on a project for work and then we headed to bed since he had to get up at 3:30am! Yikes.
