I snapped this photo of Bentley this morning….grrr! He looks grumpy doesn’t he? I guess he didn’t like me snapping photos so early. Then I got to thinking…sometimes I can’t believe what our life was like before Bentley come into our world. I love this little guy so much. And then it makes me think of what it would be like to have my own child and how my love would be a million times deeper because it is a part of you. For example, if we go out-of-town for the weekend like we did over Thanksgiving, I missed him so much and worried about him. We always give him plenty of food and water to keep him tied over until we get back, but I’m still responsible for his little life. Anyway, I know you can’t truly compare Bentley to a child, because I’d never leave my child on his/her own like we do Bentley, but you sort of can because he depends on us. I love him!!!
Workout: I managed to get my butt out of bead this morning and headed to the gym to do some cross training on the stationary bike – I did 40 mins on level 3 while reading my book.
Onto today’s eats….
Breakfast: I was craving protein this morning and decided to cook myself an egg. So, I had 1 egg + 1/4 cup egg beaters, avocado and some delicious salsa my husband made. I also had some delicious coffee with splenda and silk soy creamer (178 cal). Plus a second cup of coffee (32 cal)
Snacks: Around 11:00am I snacked on 1/2 banana w/ 2 tsp peanut butter (123 cal).
And then around 4:00 I had a grapefruit (not pictured). Delicious. This is from my aunt and uncle’s grapefruit tree in their backyard. My uncle gave me a whole bag full! Yay! (106 cal)
Lunch: Today I had a huge salad and 1/2 cup canned albacore tuna. My salad contained Arugula, avocado, radishes, mushrooms, cucumber, celery, red bell pepper, cherry tomatoes, carrots. Dressing was 3 tsp balsamic vinegar, 1 tsp olive oil, 2 tsp Dijon mustard and dried dill (286 cal).
I also had Pumpking Spice tea with soy creamer (32 cal)
Although not pictured, a few pita chips fell into my mouth this afternoon (56 cal).
While getting dinner ready, I snacked on 2 Brazil Nuts ( 62 cal) and 2 dates (40 cal)
Dinner: For dinner, I had some fresh green beans that needed to be cooked, so I roasted in the oven on 400 degrees with olive oil, salt and pepper for 30 mins and then sprinkled garlic powder, sliced almonds and soy sauce and roasted for another 10 mins. I also cooked a Gardein Chick’n Scallopini patty (183 cal).
Dessert: I sautéed a pear with a little brown sugar, cinnamon and ground ginger and sprinkled in some sliced almonds (119 cal)
Calories: Approx 1217 cal
Now I’m watching some Top Chef re-runs on Bravo. I’m going to go and read my book for book club.
