Every time I hear the word “Miami” this phrase pops into my head.
Hey there…sorry I’ve been MIA, but it’s been a little hectic around here.
This past weekend, I headed to Miami to hang out with the hubby while he’s over there for work. It was a great weekend, although too short.
Friday Recap -
Workout: I was unable to get a workout in, I really had a lot of loose ends to tie before heading out after work
Breakfast:
Today’s smoothie included:
1 cup of Silk Light Vanilla Soy Milk
½ Banana
1.5 cups Spinach
2 Tbsp of Living Harvest Hemp Protein Powder
A few drops of vanilla crème stevia
Lunch: I was starving by the time lunch rolled around. So, I ran out and grabbed some lunch at Chipotle – Crunchy taco shells, black beans, sauteed veggies, pico de gallo, lettuce and guac.
Around 3:00 pm, I left work and stopped by my place to check on Bentley scratchy pants and finish grabbing my stuff for the weekend. So, I was on the road just a little before 4:00 pm for my 4+ hour drive to Miami. It rained on me for more than half the way which was kind of stressful since I was drivng a new route.
But the trip was ok and I ended up in Miami – thankfully without getting lost!
Snacks: earlier in the morning I snacked on 1/2 banana w/ peanut butter.
I also snacked on some baked lays while on the road and a Kashi Granola bar
Dinner: It was getting late, so me, the hubby and 2 of his co-workers had a couple drinks down at one of the hotel cafe’s. We ordered some appetizers. I had the Bruschetta which was excellent! The bread was sliced thin and toasted perfectly. The tomatoes tasted delicious and the balsamic was soft of sweet and not to tart. It also had shredded parmeasan cheese on top, but I scraped it off.
We also had plantain chips with spicy mango salsa. This was good too.
Then we called it a night.
Saturday Recap: Saturday I woke up and hit the gym first thing. The hubby had to go into work for most of the day so I was left to just do my thing.

The hotel room – the hubby got upgraded! Sweet.
Workout: 40 min walk on the hotel treadmill.
Breakfast: Breakfast was a Kashi granola bar – nothin too exciting
Lunch: Lunch was eaten by myself at one of the hotel restaurants. It was a turkey club with lettuce, tomato, and mustard with a side salad. I was starving, so this tasted sooo good. I also had an Amstel Light to wash it down. The watier got my order wrong, so he brought me fries with my sandwich at first and I ate about 3 of these.
For the rest of the afternoon, I kind of just chilled out and watched a little TV, read my book for bookclub and took a little nap while Iwaited on the hubby to get off work.
Dinner: After the boys got of work we headed to South Beach for dinner. We asked for a restaurant recommendation at the hotel and were told of Gloria Estefan’s restaurant Larios. This place ROCKED! It was so yummy!!
I left my camera at the hotel, but here’s our eats for the evening.
Appetizer – Bongo’s Combo which contained pork tamales, fried stuffed potatoes, stuffed plantain cups, traditional cuban ham croquettes, and cuban mojo marinated fried pork chunks – yummy!
Entree – Boneless Chicken Breast Stuffed with Shrimp - this was baked in a tomatoe sauce and topped with green peas. Very good and tender.
Dessert – Most contained milk and I was really full so I had none.
Drinks – we all started with Mojitos and then had a Malbec wine from Argentina with dinner. Some of the guys had coffee to finish off their meal.
It was truly and awesome dining experience – we took our time, so it was relaxing – I think we were there for like 2+ hours.
Then we just walked around the area a bit and all had another drink at one of the other restuarants.
After that, we piled into the car, drove home and called it a night.
Sunday Recap:
Breakfast – Kashi Granola Bar
Lunch - Lunch was on the road – so I had a bag of baked Lays, water and even broke down and bought a candy bar. I was so hungry
Dinner - I was really craving something filling and tacos! So, I made my own. Here are my fillings – sauteed bell pepper and red onion until softened, simmered black beans with cumin, chopped fresh spinach, goat cheese, tomato, salsa, and fresh guac. I also had a glass of Barefoot Cabernet Savingnon.
After dinner, I did laundry, cleaned up the condo and read the rest of my book. Then I called it a weekend!
