Get up and go to work!
I really didn’t want to get up and go to work this morning. I wanted to hang out at home and play with Bentley. But I must be a responsible, so I got myself going.
Breakfast: A delicious smoothie. I think I must have been asleep when I made it though, because I think I left out the spinach and I just bought a whole new bag just for my smoothies this week. Silly me.
Here’s what was in it:
1 cup of Greenwise Light Organic Vanilla Soy Milk
1/2 cup frozen blueberries
1 pkt Amazing Grass Kidz SuperFood Wild Berry
1/4 th avocado
ice

Gala Apple – so delicious
Cranberry Orange Nut Bread Clif Bar - this was an awesome flavor – first time I’ve every had this and I really liked the orange flavor. But at one point it kind of tasted like licorice, but only like one bit. Weird. I would have this one again.
Lunch - Lunch was a delicious sweet potato with a little bit of the light smart balance spread in it. I also had a side of fresh cucumber slices and 1 roma tomato. Plus approx. 1 oz of Mt. Sterling raw goats milk cheese – goat’s milk cheese is the only dairy I’ll eat. And this stuff rocks. 
Dinner - I made a veggie pita pizza for dinner. Yum! I even made my own homemade sauce on Sunday night while making my tacos. (Unpictured)
For the sauce I used:
1 can of crushed tomatoes
1/2 med yellow onion
2 tsp olive oil
crushed red pepper flakes
approx 1 tsp dried oregano
approx 1/2 tsp dried sweet basil
approx 1/4 tsp of garlic powder
I sautéed the onions in olive oil until soft and translucent. Added the tomatoes and spices. Brought to a boil and then turned down to simmer for about 45 mins. I then let it cool down for about 1o mins and put it all in the bullet and pureed it so that it is still a little chunky, but looks like a sauce instead of just diced tomatoes. It was really good the next day when all the flavors had a chance to blend together.
Toppings for my pizza:
Pizza sauce, sautéed green peppers and red onion, sautéed mushrooms, 1/2 oz Mt. Sterling Goat cheese, 5 green olives sliced, black pepper, pinch of sea salt
Then I tossed it into the oven on 400 degrees until the cheese was melted – probably about 7-10 mins.
Workout: Today was my day to run and I did a full 35 mins. I felt better this week going that full amount. I feel it towards the end, but I’m hoping that by February I’ll be able to do the 9.6 miles I’ve committed to.
I’ve been lazy and have been as good about documenting my calories as I did before the trip to Miami – must get back into the habit.
This week and weekend feel so hectic and I have tons to do!
