But first things first, I got up really early this morning and headed to the
gym. Here’s what I did.
Workout:
- Warm-up – treadmill 10 min walking
- Run – 4 miles (in slightly under 40:00 mins!!!)
- Cool down – treadmill 8 min walking
Breakfast: I’m obsessed with these pita sandwiches I tell you! They are so delicious and very comforting.
- 1/2 whole wheat pita
- Spinach
- 2 egg whites
- 1 Tbsp Avocado
- 1 tsp of the Cilantro-Mint Chutney from the other night
- Cucumber
I also had 1/2 banana with 1 tsp of peanut butter – not pictured.
Lunch: I had a yummy salad for lunch
- Arugula + Spinach mix
- 5 olives
- 1 Tbsp Avocado
- 1/8th cup Cucumber
- 6 Cherry tomatoes
- 1/8th cup chickpeas
- Dressing: balsamic vinegar, dijion mustard, dried dill and a splash of olive oil

Snacks:
I also snacked on my bag of cinnamon + brown sugar oatmeal, but I didn’t feel like adding water to it, so I ate it plain. It’s really good that way and would’ve been even better if I could’ve eaten it like cereal.

I stopped by Publix during my lunch break to pick a few things up and grabbed some Snyder’s pretzels – Honey Mustard Onion – and had a few in my car on the way back to work -
After work, I headed home to get started on some things for our community group social we’re having out my clubhouse tomorrow night. I’m making an Olive Oil Cake. Recipe sounds great. I will post the recipe tomorrow.
While getting the cake in the oven, I snacked on some banana bread (this X2).
I also fixed some green beans and sprinkled some garlic powder, salt, pepper and a little bit of earth balance – yummy!
Well, I’m about to relax a bit and make sure I have things together for tomorrow’s social. The hubby is hanging out with the boys this evening, so it’s just me and Bentley watching So You Think You Can Dance.
