Hope everyone had a great Christmas! Here’s a recap of ours.
The hubby fixed me and my sister a delicious Christmas Eve Dinner – Sauteed Chicken Breast with sauteed veggies that included – Mushrooms, Green Beans and Potatoes. We had delicious wine with it was well. It was AWESOME!!
It has been a family tradition since I was a little girl to leave some goodies out for Santa. So, I have made a point to keep this going, eventhough the past 2 Christmases have been with just the hubby. But I will continue it until my children are able to take over and carry it on for me. I even have a special cup and plate I bought a looong time ago at The Disney Store…does that place still exist? I don’t even know. But it was a winnie the pooh ceramic set I got and have used it over and over.
So, here’s what it looked like before bed
And here’s what it looked like when I woke up….LOOK! SANTA CAME – it was the first thing I did when I woke up on Christmas morning. Yes, I also wrote Santa a note. Santa used to write back, but I think he must be too busy to do that these days…
We woke up around 8:30 on Christmas day and like I said, I checked to make sure Santa ate his goodies. I made us all coffee and decided to get the breakfast casserole that we’ve been having for the past several yeas going. This because a tradition when we were still living with my family and now I’ve tried to continue on with some of our traditions. I love traditions and wish we had more but I love that the hubby and I are starting to make our own.
Breakfast: Here’s what I had – breakfast pita + OJ
- 1 small whole wheat pita
- 1 egg + 2 egg white
- 1/4 cup zuchinni
- crumbled goat cheese
- Salsa
Here’s the casserole I made. I didn’t have any, but the hubby and my sister said it was awesome!
SMOKEY SENSATIONS -
- 1/2 pkg of kielbasa (or smoked turkey) – cut in slices
- 1 8oz pkg crescent rolls
- 1 cup Monterey Jack Cheese, grated
- 3 eggs, slightly beaten
- 1 cup of milk
- 2 Tbsp minced onions
- 1 Tbsp Dill
Pre-heat oven to 450 degress. Spray 9x11x2 casserole dish with PAM. Unroll crescent rolls so that it is one long flat piece of dough and place into casserole dish. Place sliced kielbasa over dough. Sprinkle cheese evenly over meat. Combine eggs, milk, and onion. Pour over the dough and sprinkle top evenly with dried dill. Bake for 20 mins.
*Notes: I used a little more than 1 cup of cheese – probably 1.5 cups. My family loves extra cheese. And my original recipe calls for parsley, but i’m out, so I used dried dill and everyone loved it.
While I put that into the oven, we started opening presents! I got so many great things! I can’t believe how great Santa was to me. I’d post some pics…but I’m not sure my vanity will let me because you can tell we just rolled out of bed.
I did get a GPS!! Boy did I need one – Garmin nuvi 255 WT
Another big item I got was a new Home Printer – it’s a Canon PIXMA MP620B – Sweet! I’ve been wanting a new one for a long time and I’m so surprised I got one because we seem to have the worst luck with them. But the hubby even spent time setting it up for us and it’s wireless which is so great.

Of course, I had to take one of Bentley scratchy pants…
We all got items for our bikes – the hubby got a seat rack + cargo net, my sister got a wire basket and I got a new seat and a bike calculator that tells us the distance and speed, etc of our rides.
So, we tested it out for about 1/2 hour. It was so much fun!
Then we came home and were hungry, so the hubby made us delcious homemade popcorn.
Dinner - Pizza + Beer! and salad
I used this recipe here -
- 2 cups all purpose flour
- 1.5 cups whole wheat flour
- 1.5 tbsp extra virgin olive oil
- 1.5 tsp sea salt
- 1 packet dry yeast
- 1 1/3 cups warm water
3/4 was veggie + cheese and the rest was veggie + crumbled goat cheese. Bake in 500 degree oven for 15 min and Wa-lah!
