Breakfast: I needed to get to work a little early today and so I fixed some oats to go. (255 cal) Today, I just made it really simple and didn’t add much into the mix and it was awesome – simple and delicious. Sometimes simpler is better.
- 1/2 cup oats
- 1 Tbsp TJ’s Raw Crunch Almond Butter
- Splash of Light Vanilla Soy Milk
Lunch: I had the last 2 slices of Pizza left over from yesterday – This x2 (346 cals)
About 3o mins later, I had some pom seeds about 2/3 of a pom (70 cals)
Lunch total – 416
Snacks: 2 Lindt 70% cocoa square (110 cal)
5 dried apricots
Lifesavers – Approx 7 (70 cals)
This afternoon, I left work early to go to the Chiropractor. My hip has been bothering me and I wanted to get it looked at asap. He took some x-rays and discussed what he thought the issue is and what he wanted to work on. So, I’m scheduled to go back tomorrow for some treatment.
Dinner: When I got home I baked some sweet potato fries – they didn’t turn out crispy like I was hoping, but they were good (approx 1/2 sweet potato 56 cals) + 1/4 cup lentil soup (49 cals) + 1/2 cup zuchinni (9 cals) + some toasted almonds (83 cals)
Total Calories: 1139 cals
Right now, I’m just working on the blog, some laundry and watching my guilty pleasure…The Housewives of Orange County and then we’re probably heading to bed.

Thanks for taking the time to read my post. It’s a little random right now, as I’ve just started. I’d love to see this blog include a lot more recipe posts on sweets and maybe even some of my own creations on here. But also want to keep it honest and true to who I am, which is a work in progress.
