Brrr! We woke up to a cold and rainy day in Tampa this morning. After laying in bed for a while this morning and reading some of my book we decided to get up and make some breakfast. Both or our tummies were rumbling. On the weekends, the hubby usually fixes us breakfast, but what I really wanted this morning was a yummy bowl of stove top oats.
Breakfast: 1/2 cup quaker oats (160 cals), 1 Tbsp TJ’s raw almond butter (105 cals), 1 tsp fig preserves (15 cals) = 280 cals
Snack: While running some errands, I snacked on a PB & Chocolate Luna Cookie (150 cals). This might be my favorite Luna product. It’s nice and chewy and good little treat.
1 Tbsp Sabra’s Greek Olive Hummus (35 cals) + cukes (5 cals) – I snacked on this while we watched a movie – so delicious.
This afternoon, the hubby and I watched Julie & Julia. I really liked the movie a lot. I loved the idea of cooking an entire cookbook like Julia Childs’ Mastering the Art of French Cooking – a classic. How fun would that be. I also can totally relate to Julie Powell who is about to turn 30 and is at a type of crossroads and looking for a purpose, as I feel that is me right now. I would love to be able to turn my passion for baking/cooking into a career. What an awesome thing to happen. Maybe one day… Anyway, can’t wait to go and read the book now!
While we watched this, I had some Tazo Organic Chai Tea w/ 1 Tbsp of Silk Creamer (15 cals)

Lunch: It was kind of late by the time I got home running my errands, so I just had some Chex mix to snack on (130 cals)
After we watched our movie, it was around 6:30, so I started on dinner
Dinner: Morrocan Stew - Recipe by – Alexandra Jamieson, The Great American Detox Diet, Cooking Light, NOVEMBER 2007 – (251 cals) The recipe calls for a dollop of yogurt to finish it off, but I left that off.
Morrocan Stew - Recipe by – Alexandra Jamieson, Alexandra Jamieson, The Great American Detox Diet, Cooking Light, NOVEMBER 2007
Yield: 6 servings (serving size: 1 1/3 cups stew, 1/2 cup rice, and about 1 tablespoon yogurt)
- 2 teaspoons olive oil
- 1 cup diced yellow onion (about 1 medium)
- 1 cup diced carrot (about 1 large)
- 2 garlic cloves, minced
- 1 jalapeño pepper, minced
- 1 1/2 cups cubed peeled Yukon gold potato, about 1 large
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon ground turmeric
- 1/8 teaspoon salt
- 1 (28-ounce) can diced tomatoes, undrained
- 1 (15 1/2-ounce) can chickpeas (garbanzo beans), rinsed and drained
- 1 (14-ounce) can organic vegetable broth (such as Swanson Certified Organic)
- 3 cups hot cooked brown rice
Heat olive oil in a large saucepan over medium-high heat. Add onion, carrot, garlic, and jalapeño to pan; sauté 6 minutes or until tender. Stir in potato and next 7 ingredients (through broth). Bring to a boil. Cover, reduce heat, and simmer 15 minutes or until potato is tender. Serve over rice.

For dessert, I attempted to make some Smores Ice Cream, but I’m not ready to post the recipe yet, need to try another version to see how that turns out. So, I had a little bit of what I made tonight (Approx 100 cals)
This afternoon, I also made the hubby some baked pretzels - he loves them, so I was more then happy to fix these for him. And I might have snacked on a few…(approx 100 cals)

Workout: No work out today – gonna try and get it in tomorrow.
So, today was just a day of relaxing. We did a little bit of cleaning and cooking, but for the most part, we parked ourselves in the living room. It’s nice to be able to spend time with the hubby and Bentley, even for just one day a week. Tomorrow, I’ll get more stuff done…hopefully.
