What’s In the Envelope?

After work yesterday, I picked up our mail and saw shiny gold envelope in the mail with no return address. Hmm…I thought, who’s this from? Then I ripped part of the envelope open and saw part of a picture…couldn’t tell who it was and then opened the entire thing and it was a Wedding Invitation to my best girlfriend in Atlanta! Woot – Woot!
I knew she was getting married, but it’s a destination wedding and it sounded like it was just going to be family and then they’re planning on throwing a huge party later on to celebrate their marriage with everyone. But I’m so pumped I almost jumped up and down and beamed from ear to ear. I read the invitation twice just to make sure she was inviting us. And it’s in Puerto Vallarta, Mexico. So, I’m EVEN more excited because it’s out of the country, which I’ve never been.
I called her right away and I’m really looking forward to it. Of course, I told her I’d have to talk to the hubby, but basically I told her we’re coming….because, I can’t really miss this can I? Nope.
So, we’re coming up with a game plan on how to make it all happen and I’m so thrilled and honored to be apart of their special day.
Ok, onto yesterday’s eats….
Breakfast: stove top oats: 1/2 cup Quaker oats w/ a splash of light vanilla soy milk (165 cals) + 1 Tbsp AB (95 cals)

Snack: 1 graham cracker rectangle (59 cals) w/ 2 tsp AB (63 cals) – 122 cals

1 Banana (90 cals)

40z container of applesauce (50 cals) – not pictured
Lunch: 1/2 whole wheat pita (75 cals)
Arugula salad: Arugula (8 cals), 3 strawberries (12 cals), 3 mushrooms (10 cals) , 5 broccoli florets (4 cals), 1 Tbsp Avocado (30 cals), 1 Tbsp Hummus (35 cals), 1/3 oz Mt. Sterling raw goat cheese (35 cals) – 134 cals
Skinny Vanilla Latte (90 cals)

Arugula Salad
Dinner: Breakfast Pita – 1/2 whole wheat pita (75 cals) , 1 egg and 1 egg white (87 cals), 1 Tbsp avocado (30 cals), some raw goat cheese (25 cals) and some homemade popcorn the hubby made us (this portion x2 - 175 cals?) -369 cals

Dessert: 1/2 cup of S’mores Vegan Ice Cream – (approx 150 cals).
Tonight I made a different version. I’m going to post the 2 recipes later and a comparison.

Smores Ice Cream
After work tonight, I headed to the gym for a workout. Still can’t run, so I did the bike.
Workout:
- 6 min warm-up on treadmill, walking
- 45 mins – stationary bike, Intervals – Resistance 3 and then up to 7 alternating each about 1:30.
- Cool-down: 8 mins on treadmill, walking
Total Calories: 1340 cals
