Oh My Goodness! These cookies Rock! I had the best VEGAN oatmeal raisin cookie while up in Athens, GA and I’ve tried to find a recipe I think could match this. So, I went to my trusty cookbooks my sister bought me for Christmas 2 years ago. I also looked on the web and compiled a few…most were similar. But I decided on a recipe in my Veganomicon book! If you don’t have this book – please get it. Even if you aren’t vegan, it will open your eyes to so much!
I did make some changes to the recipe. I didn’t have all the spices on hand and I replaced 1/2 the oil with applesauce. I know that annoys some bakers, but you do what you gotta do sometimes. I wanted some cookies and felt this was the best way for me to enjoy them.
Pre-heat oven to 350 degrees. I mixed the ingredients – wet ones first then the dry ones and I combined the two.
Mix well, but don’t over mix.
Drop by rounded Tablespoons on parchment paper lined cookie sheets. Press down to flatten just a bit.

Bake for 11 mins and cool on pan for about 5 mins and then transfer from parchment paper to cookie sheet.

Make sure to “Sample” once cooled.
The first batch I made, I cooked for 10 mins only…they were good, but pretty soft. The next batch I made, which I had let the dough sit overnight in the fridge, cooked for 11 mins and these were PERFECT!! A little crunchy around the edges, but chewy in the middle. I bet the true recipe would’ve been closer to the cookie I had when visiting my sister, but these worked for me. I looked at the ingredient list and saw that their recipe used tofu in it – I’m guessing to replace the eggs? But when I searched most recipes online, none had tofu in them. That’s ok, I’ll probably make these and send to my sister and parents who still question vegan food. I know they won’t question these delicious bites of joy!
I think I might even add some pecans and/or vegan chocolate chips next time.
