Afternoon y’all! Just a warning, this post is kind of long, but it was a great day that I wanted to capture as much as I could. Here goes…
Yesterday morning, the hubby and I got up so that we could get ready for church. I offered to cook the hubby some breakfast, but he wanted some of his Chipotle leftovers from Saturday. So, I warmed that up for him and worked on his Valentine’s Day surprise.
Breakfast: I had oatmeal cereal (296 cals)
I also had 1/2 a mini bagel at church (36 calories)
Lunch: The hubby surprised me and took us to our favorite brunch spot – Ceviche
We both started with a nice glass of Sangria (118 cals)
For our main course: the hubby had the Spanish omelette with Manchengo Cheese, potatoes and chorizo. I had the Spanish olives, peppers and garlic + hummus (Olives approx 105 cals + Hummus 150 cals)
After Lunch today, we decided to drive around the area and see what houses/apts were for rent. Such a cute area! And then when we came home, we decided to head up to the rooftop and just chill out for the rest of the afternoon.

We both had about 2.5 glasses of wine while sitting on the rooftop chatting away. (195 cals) & Then we both munched on some Baklava (275 cals)

Dinner: I had planned all week to surprise the hubby by making his favorite, Chicken Enchiladas. This morning, before church I put 3 chicken breasts in the crock pot and cut 1/2 a red onion, 2.5 garlic cloves, coriander, salt, pepper, 1 cup of water and red pepper flakes. I also added a can of green chilis after it was done cooking.
I used corn tortillas, stuffed them with the chicken mixture. Place rolled tortillas tightly in a casserole dish and once they were all in the pan, I poured green enchilada sauce over the entire pan and then added shredded cheese over the hubby’s section. Baked for 25 mins @ 400 degrees. Delish!
Here is my Valentine’s Day gift from my hubby…beautiful tulips, a great card and a terrific day spent together.
Before we finished dinner, I gave the hubby his Valentine gift…which I forgot to take a picture of , but it is a take off on the one below from Amber’s Notebook. Except that I used the fun sized versions of Twix, Kit Kats and Almond Joys, because I couldn’t find the Valentine Day ones at my store. But the hubby was so surprised and really liked this idea! I also got him a sweet card.

What a Super Romantic weekend/day I had. It was so great to spend a lot of quality time with the hubby since he’d been out of town for about a week and a half for work!
