“Food is our common ground, a universal experience”
I wholeheartedly agree with this statement. It’s incredible how food brings people together – from all nations and tongues.
Yesterday morning I was so excited to try to run again. My hip was feeling so much better, I’ve been doing my hip exercises frequently, so I thought I’d try to see where I’m at. Next week is the Gasparilla Race. I’m supposed to do the 5k now, but I don’t know if that’s going to happen. I could only do 2 miles and it was painful…during the run, not so much, but afterwards it was. Feels like I’m back to square one with this hip. I’m so bummed because I just want to get back to normal. ARRGGHHH! I’m still debating if I’m going to run it and then just pay for it or let it go and let myself heal. I know what I probably should do, but I also know what I want to do. I need a miracle.
Anyway, onto the day’s eats and events….
Breakfast: Stove Top Oats (309 cals)
- 1/2 cup oats
- 1 Tbsp PB
- 1 Tbsp Raisins
- Cinnamon
- Splenda
- Maple Syrup
Snacks: 2 Fun sized twix (160 cals) not pictured
1 medium zucchini + 1/4 avocado + 1.5 Tbsp homemade salsa (51 cals)
Lunch: Roasted Beet Salad w/ Candied Pecans (275 cals) + Baklava (168 Cals)
Today, I actually had a lunch with the VP from the Alpha Gamma Delta Almnae Chapter in Tampa to talk about getting involved with the chapter. I haven’t done anything with my sorority since graduating from college, but feel this would be a great opportunity to meet new people and get more involved in things.
We went to the Nordstrom Cafe Bistro at International Mall…just down the street for my office. It’s a hidden gem. The food and service were great. I didn’t have my camera on me, but I ordered the Roasted Beet Salad- dressing on the side..here’s the description from the menu:
baby spinach, frisee, crunchy candied pecans, basil marinated roasted beets, red onion, goat cheese, dark cherry balsamic vinaigrette
It was so good! I’m seriously tempted to roast some beets this weekend, it was so delicious, I cleaned my plate! The hubby isn’t a big beet fan, but I bet he would change his mind if he ate this salad. The beets had a mild flavor, you could taste the basil though, but it wasn’t overpowering. The candied pecans were awesome too. Me and the hubby will definitely be meeting here soon for lunch!
After my lunch I snacked on the piece of Baklava I brought…so delicious.
Dinner: Even though I had a salad for lunch, I wanted another one for dinner. (261 cals) + Apprpox 1 Tbsp PB while I got it ready (105 cals)
Here’s what I threw in:
- Romaine Lettuce
- Leftover veggie taco from Chipotle (158 cals)
- Salsa
- 1/4 cup cucumber
- 3 sliced mushrooms
- 1/4 cup Steamed Broccoli
- 3 Steamed Asparagus spears chopped
- Ken’s Steakhouse Light Vinaigrette dressing (25 cals)
Total Calories: 1379 cals
Workout:
- Warm-up – 10 mins walking on treadmill
- Run – 2 miles – 20 mins
- Cool down – 7 mins walking
- Stationary Bike – 65 mins
- Stretching
After dinner, the hubby and I just watched some TV and did our small group “homework” and then headed to bed early. See y’all later.
