Ooh, another good quote for the day. I love learning and definitely feel that people should constantly strive to never stop discovering new things, whether it’s through reading or doing. We should always push ourselves to learn more and stretch what we currently know.
Ok, onto yesterday’s eats….
Breakfast: Protein Packed Smoothie (219 cals)
Snacks: 1 Serving of Roasted Almonds (170 cals)
Lunch: West African Chicken & Peanut Stew w/ Chiles, Ginger & Green Onion - found at Kalyn’s Kitchen which is a super awesome place for finding great South Beach Diet Recipes. I decided after following the recipe, that it I could add so much more to it to beef up the nutritional content. So, I experimented by adding tomatoes and more veggies. I also had 1/2 cup of asparagus and 1/4 cup jello (Approx 257 cals)
1 lb cooked chicken breasts
1 large can of diced tomatoes
1/2 cup diced red onion
1/2 cup natural crunchy peanut butter – I used Smuckers
1 cup broccoli florets
1 medium zucchini
3 green onions
Snack: 3/4 cup of raw Cauliflower (19 cals)
1 Tbsp Natural PB – unpictured (105 cals)
Dinner: Dinner was experiment 2…I made some Turkey meatballs, but just throwing some things together and they were delicious!
Turkey Meatballs, Mashed Cauliflower, Steamed Broccoli (223 cals)
For the Turkey Meatballs I used: Red onion, soy sauce, ginger, cilantro, garlic powder, salt & pepper.
Dessert I had a 8oz glass of Unsweetened Almond Milk with Vanilla extract and 1 Splenda (40 cals)
Total Calories: 1032 Calories
Workout: Today I started the P90x Lean program. I have all of the DVDs and had started doing it before we moved to Tampa, but then I never really picked them up except for the yoga one here and there. But I have a friend who’s had a lot of success lately with them, so I thought why not.
Core Synergistics – 60 mins (wow, this was tough, I definitely need to work on my core)
- Stationary Bike – 30 mins
After dinner, we watched the Olympics and then I read for a little bit and then crashed out.
