After work on ThursdayI headed to the gym to walk and read my book and take it easy before the Gasparilla 5K on Saturday.
Hey y’all! Sorry I’ve been a little MIA this weekend…but I’m dealing with a hurt hip and it’s cramping my style. But here’s a little re-cap of Thursday and Friday.
Workout: 60 mins on tread mill@ lvl 4 incline
Dinner: I decided to bake some tofu and add a side of zucchini to finish it off. Yum!
Friday
Breakfast: Roasted Almonds (170 cals)
Snack: Sugar free black bean brownie w/ PB. I made these the other day because on phase 1 of the South Beach Diet, you don’t really get that many sweet treats. So, I searched the web and found something that looked and sounded awesome…black bean brownies. Mine did turn out ok, but they were more cakey than fudgy and I think it’s because I didn’t hear the timer go off. So, I plan to make them again soon and will post the recipe I used. Excited that I found a little sweet treat I can have!!! (Approx 175 cals)
Lunch: For lunch I decided to head out and run some errands before the weekend, so I stopped and grabbed a veggie salad for lunch from Chipotle. My salad contained romaine lettuce, black beans, grilled onions & peppers, medium salsa and guac. So delicious! (310 cals)
After work, my friend from work and I went to go to the Health Expo at the Convention Center to pick up our race items for Gasparilla. On our way out, she realized that the locked the keys in her car, so we drove to my place, walked to the Convention Center, which is about 1.5 miles from my place, picked up our gear, walked around and then headed back. Then I drove her home and picked up her hubby and then drove back to work to pick up her car.
By the time this was all said and done, it was like 8:00 and then we didn’t really have anything ready to eat at home because I had planned on going to the grocery store right after I picked up my race stuff, but it didn’t work out exactly that way. So, I picked up some ready-to eat things at Greenwise
Dinner: Harissa Chicken Breast, Roasted Brussel Sprouts with garlic and pine nuts, small bowl of black bean soup – I was starving by this point, so I didn’t snap a pic, but it was so yummy! (Approx 400 cals)
I watched a little bit of the Olympics and then made sure my clothes were ready for the morning and then crashed out!
