A green monster that is! I love making these smoothies and love how you can pack great nutrition into something that tastes great! And since I had a little extra time this morning I decided to serve up my smoothie in a little nicer stem ware. I love drinking water or diet soda in wine glasses. It’s just so fun!
So, this morning, I spent a few hours at the eye doctor trying to get some new glasses. I picked out a cute pair of frames and can’t wait until their ready for me to pick up. They said it could take up to 10 days…crap! I really thought I’d have them quicker, maybe I’ll be surprised and they’ll arrive quickly!
So, I’ll jump right into it….here are today’s eats.
Breakfast: An Elegant “Green Monster” (213 cals)

1 cup of packed Spinach

1 cup Almond milk

1 Tbsp Almond butter

1/4 cup silken tofu

2 sliced strawberries

splenda
-
crushed ice
Lunch & Snack:
After leaving the eye doctor, I snacked on my almonds around 11:00am – so yummy! (170 cals) And then ate my lunch around 1:30. (150 cals, 10 cals)
Today’s salad consisted of:
- Spinach
- 1/4 cup cucumber
- 1 Tbsp Roasted red pepper hummus
- 1 Tbsp artichoke olive spread (finished it off- boo)
- 2 sliced strawberries
- 1/2 oz of feta cheese
- 1/4 cup mushrooms
- flat leaf parsley – for a little somethin’ different
Then a little container of Black Cherry jello to round it off
Afternoon snack: My experimental Blondie from last night (200 cals)
Snack: Soy Joy (130 cals)
Dinner: 1 egg + 1 egg white and 2 Tbsp roasted red pepper hummus (150 cals)
Dessert: Chickpea Blondies (200 cals)
I also had a few pieces of chocolate (75 cals)
Total Calories: 1128 cals
Workout: None
We just got back from our couples small group tonight where we talked about Romance and how to keep it at any stage life. Good conversation tonight!
So, now I’m just watching The Real Housewives of the O.C. reunion show…love it! And then I’m off to bed. Night y’all.
