These were awesome and the hubby even liked them. I will definitely be making these often!
HOMEMADE COCONUT OIL
After reading this post on HEAB, I got the itch to try to make my own coconut butter. I’ve never tried it before, so I wasn’t 100% sure how it was supposed to taste or look, but since it’s just processing dried coconut flakes. So, on my lunch break on Friday, I headed to WholeFoods and bought some unsweetened dried coconut. I was very fearful that I was going to burn out the motor on my food processor. But in total, it probably took me about 30 mins to get it from the flakes to a liquid form. I stopped it often to scrape down the sides and to give it a break. But I’m really happy with how it turned out.
I used 2.5 cups of unsweetened coconut
I will be making this again…maybe I’ll let the food processor run more frequently than stopping it and scraping down the sides so often. I was just paranoid that Iwas going to blow up my food processor. But it was worth all of the effort!!
PINTO BEAN SALAD
I’ve already posted this salad before, but I LOVE it! It has such a great flavor and so fresh and bold bright colors. Recipe is based on this one here from Kalyn’s Kitchen.

2 pinto beans
- 2 roma tomatoes
- 1/4th diced red onion
-
1 avocado diced
-
Large handful of cilantro
- Balsamic vinegar
- olive oil
- salt
- pepper
BIG CRUMB CAKE
Another one of my new go to recipes is for this big crumb cake based on this recipe at Vegan Yum Yum. I hadn’t made anything for the office in a while, so I thought I’d bring this in. I cut them into finger food sized pieces for easy munching.
I did make a change to this recipe by replacing the oil with greek yogurt. But I don’t think that worked very well or maybe I over mixed it or something because it didn’t turn out like the one I made last week for the cookout. Maybe I overcooked it, but the cake part seemed really dense and spongy. Chewier than I would like, but they were all eaten so I guess they were ok.

Everything looks delicious. So glad you enjoyed your coconut butter. Looks like you used flakes, and some people have told me they had an easier time processing using shredded coconut. So, that make make a difference next time.
