Hey y’all! Happy Tuesday! I hope you had a great weekend, I sure did. The weather was GORGEOUS this weekend! So, there was no way we could pass up an opportunity to get out and enjoy it, so we decided to ride our bikes around our hood and then stop for a little treat. So, here’s
SATURDAY
Me and the hubby woke up kind of early and
Breakfast: Eggs + Sautéed Veggies + Vanilla Almond Milk
After Breakfast, the hubby and I decided to get out and enjoy the beautiful day and headed out on a bike ride around Channelside….
This ship is actually a memorial/museum like right outside our back door – it’s just across the street from our condo building. It’s pretty massive.
Lunch: I begged politely suggested to the hubby that we should stop and have a Sangria on our bike ride. So, we split a tapas @ Tinatapas - this was the Baked Crab Al Fornos (crab meat, Manchengo cheese, spinach baked in a terra cotta dish) with tortilla chips. It was just supposed to be crab, but I think there might have been a little something else added in there. It also had a lot of cheese, so I picked around it and at some chips and sipped on my Sangria. I probably had about 1.5 glasses of Sangria. We basically left this much of it. You live and learn, I guess.
After we snacked on this, we rode around for a little while and then headed back because the hubby had plans to meet up with a friend and hang out. While he did that I worked on some recipes in the kitchen, which I will post in a bit – it would make this post super long.
Dinner: I made this pinto bean salad again and ate on that for dinner – this stuff is so good! I added an additional can of pinto beans and used regular balsamic vinegar since that’s all we had on hand. This is easily becoming my favorite dish to make. It just screams summer to me.
So, most of Saturday evening, I just played around in the kitchen and then relaxed a bit and watched some TV.
SUNDAY
Sunday morning I attended the 9:30 service at our church and boy was it just a wee bit tough to get up that morning since we lost an entire hour and I didn’t get into bed until late. Oh well, I like that it’ll be lighter in the evenings now.
Breakfast: Coconut Mango Soy Joy
Lunch: I snacked on a little bit of Pinto Bean Salad while I put away the laundry and tried to straighten up the condo.Then I got a call from a friend wanting to head to the beach over in St. Pete and read for a little while. That’s how AWESOME the weather was! But I forgot to take my camera!! Dang it!Anyway, we stayed out there for about 2 hours and then headed home. It was so beautiful…basically a cloudless sky. The temperature was good – a little breeze so that it wasn’t too hot or too cold. Just right!Dinner: I was pretty hungry once we got back, so I started dinner for the hubby and me. I made him some ground turkey and black bean tacos. And I ended up having a “taco salad”. Very fresh.
My salad had lots of goodies: Spinach, asparagus, cucumber, zucchini, a little bit of pinto salad, avocado and then the ground turkey + black bean taco mixture : mushroom, onions, garlic powder, cumin seeds, chili powder.
After dinner, we watched The Hurt Locker, which was a big winner at the Academy Awards. It was a good movie – super suspenseful and kept me on the edge of my seat! But I’m not sold that it was the best movie of the year. Maybe it’s just that I’m not the biggest war movie fan. But I’m glad I saw it and it definitely reminded me of how great our country is and the courage it takes to be in the military. I have mad respect to everyone in the military.
