Hey y’all! Happy Thursday and Happy Earth Day! Boy am I glad the weekend is almost here – how about you? Are you planning on doing anything in honor of Earth Day? From my previous post after watching No Impact Man, here are items we’re trying to implement on a daily basis moving forward.
In honor of Earth Day, I did have a delicious green smoothie with lots of green kale and some strawberries that make me think of our planet.
- 1 cup Light Soy Milk
- 2 Tbsp Living Harvest Hemp Protein Powder
- 1.5 Tbsp Avocado
- 1 Large handful of Kale
- 4 Strawberries
- Vanilla Creme Stevia
- Crushed ice
I’ve also had 1/2 of a Kind bar – fruit + nut delight this morning
Well, I guess I should recap yesterday’s eats and events….
Snack: Strawberries
Lunch: Yesterday I ate my lunch in shifts – It’s been cold in the office and I really wanted something warm to eat. So, I warmed up my flax-encrusted sweet potato balls and dipped them in mustard for the first part of my lunch. So yummy!
About 3 hours later I busted out the rest of my lunch – A spinach salad with hummus as the dressing. So yummy and colorful!
- Spinach
- 1 Roma tomato
- Beets
- Broccoli
- Avocado
- Capers
I also had 1/2 of a small slice of the raw chocolate cream pie – tastes like an almond joy.
Dinner: I quickly ate some quinoa and coconut chickpea curry before we had to leave and head to our community group.
Cupcakes
A coworker is having a b-day today, so I brought in cupcakes for the birthday girl. I had 3 chocolate leftover from the other day that I froze and then these are the Vegan Vanilla Cupcakes that also froze to use this week.
I wanted to change it up and use cream cheese frosting instead of the buttercream. I kind of winged it and made up my own recipe. I don’t know if I didn’t use enough of something, but I frosting was rather runny. The hubby said it tasted good, but it wasn’t firm and I couldn’t pipe it.
Here are the frosted cupcakes from L to R - Chocolate Cupcakes with Chocolate Buttercream frosting topped with 3 vegan chocolate chips, Vegan Vanilla Cupcakes with Cream Cheese Frosting and Grated Vegan Chocolate Chips on top, Vegan Vanilla Cupcakes with Cream Cheese Frosting and Star Sprinkles, Vegan Vanilla Cupcakes with Orange Cream Cheese Frosting and Orange zest on top
For the orange cream cheese frosting, I just added a few squeezes of fresh orange juice and orange zest until I achieved the desired taste.
