Hey y’all! I hope you’re having a great Wednesday – yay, it’s almost the weekend and that means the hubby will be coming home! For a few days anyway.
We’re getting down to the wire and still have a few things to wrap up. Like…the rest of the packing that keeps staring at me as I sit and watch re-runs of The Real Housewives of NY and NJ…dang you Bravo with your tempting tempting TV shows that suck me in and before I realize it, 3 entire hours have passed me by.
Anyway…I haven’t posted much this week, I keep running out of hours in the day. But here’s what’s been going on this week. I’ve been craving me some oats and veggies as you will see below.
Sorry if my eats get boring…they’re just so good that I have to repeat them several times during the week!
MONDAY
Breakfast: Oats w/ maple syrup + Almond butter
Monday was the last day for one of our IT guys and I made him some peanut butter cookies. Instead of regular sugar, I used Sucanat and they turned out really good!
Snack: Zucchini + Cucumber and Hummus
Lunch: Soup – a mixture of the spicy black bean and the curried red lentil. This combo was actually good, it took some of the sweetness away from the curried red lentil soup.
I also had some Fage Greek Yogurt with my homemade granola – delish!
Snack: I also
Dinner:
My salad contained:
- Arugula
- Canned beets – didn’t have time to roast my own
- 1 oz of Sabra’s hummus
- Artichoke quarters
- 1/4 avocado
- balsamic vinegar and olive oil
Dessert: Chocolate Cream Pie that I had frozen a while back
Workout:
- 20 mins on Elliptical
- Lvl 2 of the 30 Day Shred – this kicked my booty! But it was nice to switch it up, I’ve only ever done lvl 1
TUESDAY
Yesterday morning, I got up early so I would be the first one on the treadmill. My intentions were to run, however, my body didn’t agree with that. My joints were hurting so I decided to listen and not force myself to run. So I walked instead.
Workout: 60 min walk on the treadmill – 4.0 speed and I did hills so that it would incline – I did lvl1 – lvl3 and repeated for an hour.
Breakfast: Oat bran w/ 1 Lg scoop of Almond butter
Snack: Veggies + Hummus
Fage + Homemade granola – I usually don’t do dairy, but I was craving this when I went to the store the other day. I think it’s because my sister was talking about yogurt this past weekend. So, I opted for the fatfree. LOVE this stuff…ooh so torn.
Lunch: Arugula + Beet Salad and a Banana
My salad contained:
- Arugula
- Canned beets – didn’t have time to roast my own
- 1 oz of Sabra’s hummus
- Artichoke quarters
- 1/4 avocado
I LOVE BEETS!
Dinner: I decided to treat myself last night and ordered take-out from Grass Roots, my favorite Raw/Vegan restaurant. I will definitely miss this place a ton! So, I wanted to have one last meal from there!
I chose the Sabrina’s Favorite Sandwich: Onion bread, hummus, sprouts, avocado romaine lettuce and sheeze
And blue corn tortilla chips & Guacamole – I love Avocados and guacamole!!
Dessert: The very last of my raw chocolate cream pie! Boo! This was so delicious, I can’t wait to make it again.
I was a bum last night and had planned on going back to the gym to run or do the lvl 2 30 Day Shred, but I was just so tired – so I watched some TV and then crashed out with Bentley!
