Hey y’all! Hope your Wednesday has been a good one – I know mine has! Today was seriously a fun day a little meet-up with an old friend was something I definitely needed. So, here’s my eats and events for today….
Breakfast: Green Smoothie
- Spinach
- Almond Milk
- 1/2 banana
- 2 dates
- Almond butter
- A sprinkle of dried coconut
I also put this into the mix – Amazing grass
Lunch: Today I had the pleasure of meeting up with my friend Meghan from college who was one of my sorority sisters and roommate. We met up at a place called Gabriel’s in Marietta, GA. I didn’t have my camera but I ordered a sandwich, baked chips and water.
I had the Maple glazed roasted chicken breast on ciabatta bread with spicy mustard, lettuce, tomato and sprouts. I ate most of it but left about 1/3 of the bread and 1/2 my chips.
We probably spent about an hour and a half just catching up and I got to meet her soon who is 11 months old. Hard to believe how much has changed. It was a great time and I’m super excited to have reunited with her!
After driving home, I tried to do a little job hunting and watched a few episodes of The Hills Season 1 – I just needed something mindless in the background while I was researching online.
Then I headed to the gym.
Workout:
- 60 mins on the full-body elliptical – 2:2 interval – resistance 1, then resistance 8
- 25 mins on treadmill – walking
Snacks: Pure Bar
Dinner: Tonight I made the hubby some nachos – he really liked them
My picture is a little blurry, but I included chips, leftover steak from our kabobs, grilled onions, grilled corn, grape tomatoes, and grated cheddar cheese. I topped it with fat-free yogurt, arugula and hot sauce.
I on the other hand had a nice big arugula salad for my dinner
Tonight I fixed some tempeh to add into my salad
I cut a package of tempeh into bit-sized pieces and then mixed a little marinade/sauce to cook it in – I mixed:
- 2 Tbsp soy sauce
- 2 Tbsp rice wine vinegar
- 1.5 Tbsp honey
- 1 tsp ginger
- 1 garlic clove, minced
- water
I then poured this into a sauté pan and cooked for just a few mins.
The rest of my salad contained:
- Arugula
- Cucumber
- Grilled Corn
- Mushrooms
- Soft Goat Cheese
- lemon and olive oil to dress the greens
And a little treat to help wash it down
The hubby and I are taking turns watching shows. I made him watch a few more episodes of The Hills and now we’re watching a few episodes of Survivor Man.
Dessert: 2 Dates Stuffed with Almond Butter and topped with shredded coconut – so yummy!~
