Morning y’all! Hope you’re Wednesday is going well – today I’m meeting up with an old college friend/sorority sister today for lunch. I’m super excited because I haven’t seen here in years and she’s just had a little boy a few months ago – my how time flies. So, I’m about to get ready.
But here are my eats and events from yesterday….
Breakfast: This morning I had another green smoothie and a few sips of coffee with a splash of vanilla almond milk. Good way to start the day
Snacks: Pure Bar
Raw Almonds – probably about 12
Lunch: For lunch I fixed me a nice large salad
My salad contained:
- Arugula
- Cucumbers
- Grilled Vegggies – peppers, asparagus, yellow squash and onions
- Chopped Almonds
- Grape tomatoes
- And then I slathered on hummus
Dinner: This week, I planned on making a coconut curry soup for us but I wanted to make it a different way than I usually do, so I found this recipe for Chicken Coconut Curry Soup at Savory Sweet Life. And although I didn’t have exactly all of the ingredients like a red bell pepper, but I improvised and it was so yummy.
I don’t know what it is about soup, maybe it’s because it’s warm and filling, but it’s the type of food that is really comforting, not just in the cold weather, but at any time really. I felt tonight was the right night to make it and I’m glad I did.
My soup had:
- Coconut Milk
- Vegetable stock
- Mushrooms
- Chicken
- Grilled bell peppers
- Grilled corn
- Onions
- Leftover Basmati rice
- Red Curry Paste
- Soy Sauce
- Salt and Pepper
I topped mine with a little cilantro – supper yummy
I also had another little dish of strawberry cobbler with soy ice cream for dessert – in the same sized dish as above – delicious!
Workout:
- 3o min treadmill – 10 min walking and then 20 running
- 45 min full body elliptical – 2:2 interval – rest 1, then up to 8
- 35 min treadmill – walking 3.5
I also spent some time looking for a job, etc. So, it was a pretty productive day.
