Breakfast: Protein Pancakes – are you tired of seeing these yet? They’re so good though!! I fixed them for the hubby again with 1/2 diced peach – I added Naturally More PB to the top of mine and the hubby poured maple syrup on his.
Lunch: I decided to conduct a little experiment and tried making a soup, which I was hoping would be very similar to the one we always order at our FAVE Thai place – Little Bangkok.

And all of that turned into this….
The recipe called for 2 limes, but next time, I’d start with 1/2 of one and then build up from there, our soup ended up very “limey” and we added a little sugar to try to counterbalance this taste – which worked a bit, but next time, I’d start off slower and add more. I also used 1/2 regular coconut milk and 1/2 light because that’s all I had – probably would’ve been a little closer to the real thing if it was all regular coconut milk. DARN IT! It was still yummy and the hubby was happy with it, which is really all that matters.

We also snacked on tortilla chips with salsa, a few bites of chocolate.
Dinner: with all that snacking – I decided to have something green for dinner
Then the hubby and I hung out and watched Dexter and worked a little bit on our budget! Fun stuff y’all!!
