Ok, maybe not around the world, just Detroit, but it was a whirlwind of a weekend that’s for sure! Here’s a recap…
FRIDAY
The hubby was kind enough to drop me off on Friday at 6:30am at the airport.
Unfortunately, I left my camera charging on the docking station, so there are no photos to post. But, you guys didn’t miss much, it was pretty fast paced conferency stuff.
Friday afternoon, my boss had a lecture to attend, so I read a little and decided to hit the gym at the Westin Detroit.
Workout:
- 10 min walking on treadmill
- 4 mile run
- 30 min walk, uphill
- Core work: Stability ball, medicine ball 6 lbs,
- lunges – 10 on each leg
- 25 jumping jacks
After the gym, I got ready to head to the little reception that was being held after the first conference. There I had an Amstel Light, veggies – carrots, grape tomatoes, celery sticks and asparagus spears, wasabi peas, gouda cheese with a handful of crackers. I also had 2 mini egg rolls.
SATURDAY
Breakfast: The conference began at 8:30 – so we made sure we grabbed a healthy breakfast
Saturday morning, we got up early and ordered breakfast room service – both of us got the oatmeal with toppings – the oatmeal arrived topped with pecans and sliced bananas. I added a smidgen of butter, some brown sugar and a few raisins. I’m not a huge fan of eating oatmeal outside my home or my mom’s, but this was probably the healthiest option on there. I also fixed me a cup of Starbucks coffee to go along with my oats.
Lunch: We broke for lunch around 12:30 – it was buffet style. I fixed a large mixed green salad with blue cheese crumbles, olives and grated carrots. I also had a sautéed veggies – zucchini, squash, carrots and red onions. I also grabbed a small piece of cake that had a caramel frosting on top
Snacks: I snacked on some almonds and dried cherries and some Annies bunnies during the course of the conference
By the time we were finished with the conference, it was time to catch the plane – while waiting for the plan, I grabbed a Luna protein bar – Cookie Dough – I liked this flavor a lot more than the chocolate peanut butter flavor. Not as good as the Larabar cookie dough bar, but not too bad. I liked the amount of protein in these bars.
Once we landed and finally got home, I was still hungry, so I fixed me a quick dinner. 1 piece of Ezekiel bread, 1 egg + 1 egg white, topped with salsa and a little bit of avocado – delicious meal!!
SUNDAY
The hubby and I got up semi-early to get ready for church, so by the time we got ready, it was time to head out and no time to make dinner, so I grabbed a bar to eat along the way.
Breakfast: Chocolate Chip Trail Mix Odawalla Bar (200 cals)
Lunch: The hubby decided to whip us up a nice tasty meal using only veggies – he ended up making us a veggie curry with lots of yummy spices and coconut milk
Ingredients in our curry:
- green beans
- red potatoes
- broccoli
- tomato, diced
- onion
- asparagus beans (from our OWN garden)
- lite coconut milk
- avocado, diced
- garam masala
- tumeric
- garlic

After lunch, the hubby and I decided to hit the movies and check out Eat, Pray, Love.
Snack: Instead of grabbing popcorn, the hubby and I brought our own snacks to tide us over during the movie – I snacked on another Luna protein bar – the Chocolate Cherry Almond. I really liked this version – I’m on a cherry kick lately!
Dinner: Since the hubby fixed us lunch, it was my turn to get into the kitchen and make us a meal. I decided to make mini quiches using Ezekiel bread as the base and then making my egg mixture to pour over top of the bread.
First, I made the little rounds for the base of the quiche to place on the bottom of a muffin pan
After the bread rounds are cut, I tossed into the muffin pan
Then I started on the filling ingredients:
- 2 eggs
- 1/2 cup milk (I used hemp milk)
- garlic
- onion
- salt and pepper
- grated zucchini
- manchengo cheese
I grated the zucchini and set aside.
Then I combined the egg and milk and whisked together, then added the garlic, salt and pepper, I added the zucchini and onion into the egg mixture and then stirred until well combined.
Lastly, I made thin slices of the cheese and placed on top
I baked these @ 375 degrees for 25 mins
After dinner, I made us sweet treats that I’ll post later…I”m worn out tonight! We had some seriously delicious veggie meals!

Thank you for taking the Meatless Monday pledge! That’s such a great idea to use bread as the base for mini quiches and to make them in a muffin tin! These are so versatile, I can imagine eating them for any meal and even serving them as hors-d’oeuvres. Best of all, they look really easy to make!
