Why do I love Saturday’s so much? Well, for the simple fact that the hubby will get up and cook us breakfast most Saturday mornings. He makes the best breakfasts!
Check out what he whipped up for us yesterday morning.
Breakfast: Ezekiel bread topped with 1 egg + 1 egg white, baby swiss cheese, fresh tomato, salsa and Thai basil from our garden. This hit the spot and was so pretty to look at!
While the hubby made us this yummy breakfast, I put on a pot of coffee and brought everything outside so we could sit on our balcony and enjoy the morning.
I wish we had time every morning to sit out here before having to scramble off to work. But I guess that’s another reason why I love Saturdays because we get to spend more quality time together. I love having any meal outside on the balcony and enjoying great company and most of all, great food. The hubby even impressed himself with this breakfast and will probably be making it in the near future.

I also like the fact that we are able to have Bentley out on the balcony and don’t have to worry about him because he’s pretty chill. He loves to sit under a folding chair we have sitting against the wall and it cracks me up because it looks like we’ve put him in time out. I think it must make him feel safe. Silly kitty, you are so funny.
After breakfast and coffee, we spent a few hours online looking at our budgets and looking up the points we’ve accumulated on our credit cards. Soon we will not be using these so we decided to go ahead and use up all of the points we have. Unfortunately some points couldn’t be used because they were too few, but for the most part, it’s all taken care of. Excited about our “purchases” . I’m loving the fact that they are letting you turn your points into cash and will transfer them into your bank account.
Once all of the points were spent, we made our way to the Chamblee Library to return books and get some more. I love the library – such a treasure! I even brought a list of what I wanted to check out, which I never do and then I usually spend hours roaming aimlessly through the shelves in search of the perfect book, but only end up checking out the book with the best looking cover. I tell you -I’m a Marketer’s dream…just put it in a pretty package and I’ll buy it!
Unfortunately, I didn’t find a single book on the list I put together – most of them are checked out and have huge “hold” list. But I managed to find a few cookbooks and a few others.
By the time all of this was completed – 3:00pm, the hubby and I were STARVING and after talking about what we wanted for lunch, decided to make homemade tacos. We made a pit stop and picked up a few items and then headed home to make us some grub.
Lunch: Crunchy Tacos – 1 chicken taco + 1 bean taco
What were in my tacos you might be wondering?
- leftover shredded chicken – in 1 taco
- green chilies & lime refried beans – in one taco
- sautéed red bell pepper and onion
- shredded cabbage
- freshly diced tomato
- sliced avocado
I also snacked on a few tortilla chips while preparing lunch.
After doing somethings online, we had to get ready to attend another birthday function this weekend. August is a busy month for birthdays we realized last night.
Last night’s birthday was for a friend of friend’s wife and they were having a big cookout to celebrate it. The hubby and I hurried to get ready and then he went and picked up a few items to bring with us.
We also brought a watermelon to have with the meal – it was so red and juicy and sweet. I don’t know what it is, but to me watermelons=summer – maybe it’s all of the watermelon my dad would pick up on the weekends and holidays when we’d grill out, but it’s just bursting with sweet juiciness!
I didn’t snap any pics…but we had an incredible spread:
Beverages: Sinless Margaritas (the sweet/sour mix was made with stevia – along the same lines as Skinny Girl Margarita), White Sangria and beer – I did partake in some of the sinless margarita and the sangria!
Appetizers: blue corn chips with salsa and guacamole, cherries, crackers with soft goat cheese and fig preserves (myfave!), assorted veggies with ranch. I mainly stuck with plain veggies, but I did have a couple of crackers with goat cheese and preserves – amazing combo!!
Dinner: Dinner included 3 grilled meats – steak, pork sausage and turkey sausage and lots of yummy sides – watermelon, potato salad, caprese salad, kale and mango salad. No meat for me tonight, well except for the bite of steak I had off the hubby’s plate. I had some of the sides though!
Dessert: Rustic Apple Pie with Ciao Bella vanilla gelato. I wish you could’ve seen this mammoth of a pie from Southern Sweets Bakery in Decatur – it must have weighed about 10 pounds and it was beautiful. They placed candles around the pie and we sang happy birthday and then the pie was cut. I thought about sharing a piece with the hubby but then quickly changed my mind as I saw how great this pie looks – not for the faint of heart. I had to have my own slice!

We then moved into the living room and placed several rounds of the game Things. The hubby loves playing board games, as do I, and it’s great to hang out with others that share that same interest – not everyone grew playing games and don’t have that same sense of fun. But this game had us all rolling with laughter. Then everyone packed up to head home for the evening. Definitely a great time last night with some great people!
