Hey y’all! Can I just say wow! Amazing what kind of traffic you get if WordPress puts you on their “Freshly Pressed” page – amazing, I randomly came across it when logging into WordPress today…I was like “wait, hey…I think that’s me, wait, that IS me” and then proceeded to let out a squeal of joy…luckily it was only me in the room or that could’ve turned awkward.
Look how nerdy excited I was – in all of my disbelief/joy, I couldn’t figure out how to do the print screen function, so I did what I know how to do and that’s snap a photo…not sure what that what spot is over my name? – think it might be the window reflection.
Here, let me take another shot, just so I can remind myself
I hope this isn’t a blog faux pas to mention this…sometimes I’m not sure about blogging etiquette…not until much later down the line, but this is just shows you this usually doesn’t happen and I was really excited about seeing it on the main page…pretty cool. Can you tell it’s my first time?
Not only was I Freshly Pressed today, but I also received this amazing Cherry on Top Award from Leshieloo over at All Kinds of Hungry – I feel very honored! If you only knew how much this has brightened up my day….

My answers:
1. If I could go back and change one thing in life I think I would, although the choices I’ve made have led me down a certain path and led me to meet certain people, like my wonderful husband, I do feel that there is one thing I would change if I could. I would have gone to culinary school rather than a traditional university. I felt the need to follow everyone’s footsteps and go off to college because everyone I knew was going off to a traditional school and I felt that I should too. And while I’m glad that I have my degree, I wish I would’ve pursued my passion of cooking and baking. It is something that has never left me. And while I still hope for that chance in the future, how much time have I wasted doing things other than my dream? I’ve learned so much in what I’ve done so far, that I feel it can only enhance my future endeavors and help make me be an even better baker/chef/person – so all is not lost!

Here are today’s eats in a super brief version…
Breakfast: Banana Nut Muffin
Snack: Tropical Fruit Tart Larabar
Lunch: Spinach and Field Green salad with cucumbers, avocado, chickpeas and WholeFoods Goddess dressing + 1/2 banana with 2/3 T of Almond Butter
Dinner: Chicken, Green Chilies and Onion Enchiladas (more on these tomorrow) topped with avocado + steamed broccoli
Dessert: Tonight was a splurge for dessert – a new cupcake place has opened – Gigi’s Cupcakes – Atlanta – and the owner is a friend of a patient of ours – so my boss asked me to go over for something, but I couldn’t resist these tempting treats and brought some home.

I got the Wedding Cake for me, Margarita for the hubby since he loves sour things and my sister’s favorite is red velvet, so I think I’m going to try to freeze hers until she comes back down here or I go up and see her. (Surprise)
But don’t worry, I did not consume this entire thing tonight.
